Onion Pie |
1 cup soda crackers, finely crushed
1/4 cup plus 2 TB butter or margarine, melted
2 cup thinly sliced onions
3/4 cup milk
2 eggs, slightly beaten
3/4 tsp salt
dash pepper
1/2 cup cheddar cheese, shredded
Preheat oven to 350o. Combine cracker crumbs and 1/4 cup melted butter or margarine. Press into an 8-inch pie plate. Cook onions in 2 TB butter or margarine over low heat until tender but not brown. Place in pie plate, on top of cracker mixture. Combine milk, eggs and seasonings. Pour over top. Bake 30 minutes. Sprinkle shredded cheese on pie about 10 minutes before removing from oven. |
